Roasted Salmon with White Wine Sauce

Ingredients

  • 1.5 pound salmon fillet, skin removed
  • salt, to taste
  • 1 tablespoon unsalted butter
  • 1 shallot, finely diced
  • 1 clove garlic, minced
  • 2 teaspoons flour, all-purpose
  • 1 cup dry white wine
  • 1 tablespoon chopped fresh chives
  • salt and ground black pepper to taste

Instructions

  1. Preheat an oven to 450 degrees F (230 degrees C).

  2. Place the salmon fillet on a rimmed baking sheet, and season with salt.

  3. Bake in the preheated oven to 125℉, about 13 minutes.

  4. Meanwhile, melt the butter in a small saucepan.

  5. Cook shallot and garlic, about 5 minutes.

  6. Whisk in the flour, cooking for 1 minute, then stir in the wine.

  7. Bring to a boil, then reduce heat to medium low.

  8. Simmer until the liquid is reduced by half, 15ish minutes.

  9. Stir in the chives and season with salt and pepper.

  10. Break the salmon into large chunks, and serve topped with the sauce.
