Macaroni & Cheese

Ingredients

  • 2 cups water
  • 1/8 tsp salt
  • 1 cup macaroni
  • 1 cup sharp cheddar cheese, grated
  • 2 tablespoons butter
  • 2 tablespoons milk
  • paprika
  • pepper
  • cayenne

Instructions

  1. Using a two-quart saucepan, bring salted water to a boil.

  2. Stir in the macaroni and return the water to a boil.

  3. Stirring occasionally, continue boiling for four minutes.

  4. Then lower the heat to medium and continue to boil the macaroni, with frequent stirring until macaroni is mostly dry. (7+ minutes) Lower the heat and stir more as the water absorbs/evaporates to prevent sticking and crunchy macaroni.

  5. Add the remainder of the ingredients, stirring well until the cheese is melted.

  6. If you wish to brown the top, put the mixture in a casserole and heat in the oven till attractively browned.
