Hamantaschen

Ingredients

  • 3 eggs
  • 3/4 C sugar
  • 3/4 C oil
  • 4 C flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 orange, juiced
  • some orange rind

Instructions

  1. Beat eggs and sugar.

  2. Add oil and orange rind. Beat well.

  3. Mix dry ingredients together.

  4. Add alternately with orange juice.

  5. Chill at least one hour.

  6. Use a sprinkle of flour to roll out portions of dough ⅛” thick, keeping the remainder refrigerated. Cut into approximately 2 ½” circles.

  7. Place approximately 1 teaspoonful of filling (search for hamantaschen filling recipes, or use a pie filling) in center of each circle.

    • Filling from 1C of poppy seeds fills the recipe.
    • A 15oz can of cherry pie filling fills the recipe. Thicken with 1 Tbsp of tapioca or 1.5 tsp corn starch, and add a pinch of cinnamon. Use 2 cherries/cookie.
    • Nutella or chocolate chips work too.
  8. Fold up edges of circle and pinch together three corners, forming a triangle. Consider fridging before baking, and/or moistening edges when forming.

  9. Bake at 350°F for 12 minutes, or until beginning to gold on top.
