Chocolate Chip Meringues

Ingredients

  • 2 egg whites
  • 1/2 tsp cream of tartar
  • 3/4 C sugar
  • 1/2 tsp vanilla
  • 6 oz chocolate chips

Instructions

  1. Preheat oven to 300°F.

  2. Beat egg whites until stiff, but not too stiff.

  3. Add cream of tartar.

  4. Continue beating while gradually adding sugar.

  5. Beat until very stiff.

  6. Fold in chips and vanilla. (Variation: Replace chocolate chips with 2-3 T Cocoa powder. Use mixer to mix in slowly then stir in or fold in vanilla.)

  7. Drop by teaspoons on ungreased cookie sheet.

  8. Put in oven and turn oven off. Come back in 2 hours. More time doesn't hurt. I usually leave them in overnight. Don't open the door to check them!
