Sweet And Sour Tofu

Ingredients

  • 1 cup ananas, jus
  • 1/4 cup sauce soja
  • 1/4 cup vinaigre
  • 1/4 cup puree de tomate, ??? moins
  • 1 Tbsp maizena
  • 1 tsp gingembre
  • 2 lbs tofu
  • 3 Tbsp huile
  • 2 poivron, en lamelles
  • 1 carotte, en fines rondelles
  • 1 20 0z can ananas, en morceaux

Instructions

Drain pineapple, reserving one cup of the juice and set aside. In a bowl, mix pineapple juice, soya sauce, vinegar, tomatoes, corn starch and ginger. Drain tofu, pat dry and slice into 1-inch cubes. Heat oil and saute tofu for 10. Add peppers and carrots and saute for 3'. Add sauce to the sauted mixture and cook stirring until sauce thickens but carrots are still somewhat crips,about 5'. Add pineapple chunks and heat through. Serve over brown rice.
