Stewed Sweet Capsicum

Ingredients
- 1 lb poivron, en lamelles
- 1/2 cup huile d'olive
- 1 gousse ail
- 1 lb tomate, en des
- sel
- poivre
- persil
Instructions
Saute garlic in oil gently until it begins to brown. Add peppers and cook gently for 15'. Add tomatoes: place in layer on top of peppers, season and continue cooking gently until tomaotes are reduced to a thick sauce. Sprinkle with parsley.
