Spring Vegetable Tart

Ingredients
- 3 oignon vert, chopped
- 1 cup champignons, sliced
- 1 bunch epinards
- 2 oeuf
- 1 cup c-s-c
- 1/4 tsp poivre
- 1 cup emmental, shredded
Instructions
Bake pie crust - 10' - 425F.
Cook scallions in oil for 5' or until soft. Add mushrooms and cook 2'. Add spinach and cook 2'. Set aside.
Beat eggs wtih half-and-half, add pepper. Spoon spinach mixture into crust. Sprinkle with cheese Pour egg mixture over cheese.
Bake 50' - 350F
