Splendid Frittata

  • 8 oeuf
  • 3 Tbsp huile d'olive
  • pinch Thym
  • pinch sage
  • 2 petites courgette, thinly sliced
  • 1 8oz can coeurs d'artichaux, rinsed, drained, en 4
  • 1 Tbsp vinaigre de vin blanc
  • poivre
  • 5 oz fromage de chevre, soft
  • 1/4 cup parmesan, grated
  • 2 cups onion, minced

Instructions

HALF MAKES 4 DINNERS FOR MYSELF.

Beat the eggs in large bowl.

Place a medium ovenproof skillet over medium heat for about 1 min, then add 1 Tbsp oil. Toss in the onion. Sprinkle with the herbs. Cook, stirring often, for about 10 minutes. Add the zucchini and artichoke hearts, and continue to cook, stirring often, for another 8-10 min. Stir in the vinegar and pepper and remove from the heat.

Beat the eggs until smooth. Scrape in the sauteed vegetables, plus all the bits from the pan, then crumble in the goat cheese and stir until blended.

Clean and dry the skillet, spray with oil, and return it to the stove over medium heat.

Broiler: 500 F, with a rack in the upper half of the oven.

When the skillet is hot, add the remaining 2 Tbsp olive oil, wait about 30", then swirl to coat the pan. Pour in the vegetable-egg mixture and let it cook undisturbed over medium ehat for 3-4 min, or until the ggs are set on the botton.

Sprinkle the top with the parmesan, then transfer the skillet to the preheated broiler and broil for about 3', or until the frittata is firm in the center and golden on top.
