Spanish Omelet

Ingredients

  • 1 poivron, diced
  • 1/2 oignon, chopped
  • 1 ail, chopped
  • 1/2 lb tomate, peeled, chopped
  • a few olives, sliced
  • 1 Tbsp capres
  • 1 laurier
  • thym
  • estragon
  • sel
  • poivre
  • 6 oeuf
  • fromage, grated

Instructions

Saute pepper and onion in olive oil. Add tomatoes, olives. capers bayleaf and spices. Simmer for 1/2 h. Make an omelet with 6 eggs. When nearly set, sprinkle with cheese (gruyere, cheddar) and add sauce. Serve immediately.
