Pumpkin Pasta

Ingredients

  • 8 oz linguini
  • 4 cups bouillon, legumes
  • 1 cup citrouille, puree de
  • 1/2 cup vin blanc, ou eau
  • 2 Tbsp huile d'olive
  • 1/2 medium onion, chopped
  • 3-4 gousses ail, minced
  • 1/2 tsp muscade
  • 1/8 tsp red pepper flakes, crushed
  • 1/4 tsp poivre
  • 4 oz fromage de chevre
  • parsley, chopped

Instructions

Add linguine, vegetable broth, pumpkin puree, white wine, olive oil, onion, garlic, nutmeg, red pepper flakes and pepper to a large heavy pot. Place the pot over high heat and bring to a rolling boil, them immediately set the timer for 9'. Stir and toss the pasta frequently, especially as it starts to stick to the bottom of the pot. After 9' and pasta is tender, crumble in goat cheese and stir gently until combined. Top with a handful of chopped fresh parsley, then serve.
