Pasta with Ricotta

Ingredients

  • 1 lb penne
  • 2 Tbsp beurre, en morceaux
  • 1 cup ricotta
  • 1/3 cup cilantro, roughly chopped estragon
  • 1 citron, zeste
  • 3/4 tsp sel
  • 1/4 tsp poivre

Instructions

Cook the pasta. Reserve 1/3 cup of the water, drain the pasta, then return pasta to the pot.

In a bowl whisk together the butter, ricotta and pasta water until a rich creamy sauce forms. Pour the sauce over the hot pasta. Add the herbs, lemon zest, salt and pepper, toss.
