Halibut With Mustard Sce

Ingredients
- 3 1-inch halibut, steak
- 1/3 cup jus d'orange
- 1/4 cup citron, jus
- 1 tsp basilique
- 1 tsp estragon
- 1 tsp curry
- 1/8 tsp poivre
- 1 Tbsp huile d'olives
- 3 Tbsp moutarde de dijon
- 2 Tbsp oignon, haches
- 2 Tbsp persil, hache
- 1 Tbsp capres
Instructions
Place fish in a large, shallow dish, set aside. Combine next 6 ingredients and pour over fish, turning to coat. Cover and marinate in fridge for 1 hour, turning once. Remove fish from marinade, reserving marinade. Place fish in ovenproof dish. Brush with 1/4 tsp olive oil. Broil 4 inches from heat 5 minutes. Turn fish and brush with 1/4 tsp olive oil. Broil another 3 min. Combine marinade, remaining 2-1/2 tsp olive oil and mustard in a sauce pan. Place over medium heat; cook until smooth. Add onion, parsley and capers; reduce heat and simmer uncovered for 2 min. Spoon sauce over fish.
