Friuli Style Soup

Ingredients

  • 250 gr haricots blancs, tremper pdt la nuit
  • 1/2 chou
  • 1 bunch celeri
  • 1 gousse ail, hachee fin
  • 60 gr lard, hache
  • 2-3 brins persil, hache
  • 1 oignon, hache
  • 2 feuilles sauge
  • parmesan

Instructions

Drain beans, put into pan, cover with cold water, cook for 1h1/2. Drain. Reserve liquid and add more water to make 2 litres. Return beans to pan. Wash cabbage and shred finely. Chop celeri. Add to soup, also garlic, bacon, parsley, onion and sage. Salt + pepper. Simmer 1h. To serve, sprinkle with parmesan.
