Chopped Endive Salad

Ingredients

  • 8 oz endives
  • 1 1/2 Tbsp citron, jus
  • 1 Tbsp huile d'olive
  • 3/4 - 1 tsp raifort
  • 1 tsp dijon
  • 1/4 tsp poivre
  • 4 oz saumon fume
  • 2 Tbsp capres
  • 2 oeuf, durs

Instructions

Slice endives crosswise. In a large bowl mix lemon juice, olive oil, horseradish to taste, mustard and pepper. Add endive, salmon and capers, and mix to coat. Press eggs through the large holes of a grater, or chop.

Spoon salad onto plates. Top with eggs.
