Chicken Italian Style

Ingredients

  • 2 carotte, diced
  • 1/2 lb champignons, en 4
  • 1/2 p-d-t, diced
  • 1/2 large onion
  • 4 gousse ail, finely chopped
  • 1 poivron rouge, chopped
  • 3 Tbsp huile d'olive
  • 1 14 oz can pelati, diced
  • 1/2 can 7oz bouillon
  • 1/2 can puree de tomates
  • 1 Tbsp Italian herbs
  • 1/2 tsp hot pepper flakes
  • poivre
  • 1/2 cup vin rouge
  • 2 Tbsp balsamico
  • 1 Tbsp sucre
  • viande de poulet, cuite

Instructions

Viande: bone in or out. 2 large breasts, or 4 thighs, or combination.

Brown chicken in deep pot and set aside.

In same pot add oil and saute veggies until onion is translucent and other veggies are softened, Add chicken meat and liquids and seasonings, except tomato paste.

Simmer for 45- 60'.

Add paste toward end of cooking to thicken.

Serve over rice or pasta.
