Burrito Bowl

Ingredients

  • 2 Tbsp huile d'olive
  • 2 oignon, chopped
  • 1/2 tsp cumin, ground
  • 1/2 tsp origan, seche
  • 1/4 tsp poivre
  • pinch cayenne
  • 2 Tbsp puree de tomates
  • 1 can haricots noirs
  • 1 bouillon de legumes, cup
  • 4 cups short grain riz brun, cooked
  • 2 avocat, sliced
  • cilantro
  • hot sauce
  • lime

Instructions

Heat olive oil. Add onions, cumin, oregano, pepper and cayenne. Saute 10-12'. Add tomato paste, cook stirring constantly 2 min. or until it starts to caramelize and is dry. Stir in the beans (rinsed and drained), 1 cup vegerable broth. Cook 3-5 min. or until hot and sauce has thickened slightly.

Divide the rice among 4 bowls, top with beans, and avocados. Garnish with cilantro, hot sauce and lime wedges.
